[FFmpeg-cvslog] riffenc: take an AVStream instead of an AVCodecContext

riffenc: take an AVStream instead of an AVCodecContext

It will be useful in the following commits.

Also, rename the AVCodecContext pointer name from 'stream' to 'codec'.
