I'm afraid is is already explained in the FAQ and in ffmpeg docs:

$ fgrep 'standard input' doc/*
doc/faq.texi:@section How can I read from the standard input or write to
the standard output ?
doc/ffmpeg-doc.texi:The filename can be @file{-} to read from standard
input or to write
