 This works fine
 ffmpeg -f v4l2 -framerate 25 -video_size 640x480 -i /dev/video0 output.mkv
 as does
 fmpeg -f lavfi -i aevalsrc=0 -f video4linux2 -s 640x480 -i /dev/video0
 -strict -2 output.mkv
