If you want to add metadata (you're welcome by the way) then I suggest
you stop encoding.  Try using -c copy

> ffmpeg -i INPUT -c copy -metadata KEY=VALUE OUTPUT

ffmpeg is a tool for encoding and muxing not adding arbitrary metadata
to arbitrary files.
